I have always loved squash, but this year Michael and Alannah love it for the first time. So I've been buying it at the grocery store. Last week I bought 20 pounds of butternut and acorn squash at our local farmer's market, and yesterday I baked most of it with soy butter, salt and pepper. I let it cool and then froze it to eat this winter. YUM!
I kept a couple acorn squash aside to use to make these muffins with the homemade applesauce I'm making today. I'm not a fan of fall because I'm a spring and summer girl, but I do love the harvest time.

I love both summer and winter squash! I just don't like the cooking winter squash. And most restaurants around here don't serve it.

I am not a squash lover but I will eat it. I prefer it in something or as a compliment to something, but not just alone. Those muffins sound yummy so I am keeping that to try with my girls.

I do love squash I have to admit that I just never think to cook it! I will have to try to find some recipes.

Love squash...in fact, I just planted some a couple of weeks ago...I don't know if I will get squashes but I have leaves now so we shall see. I wasn't sure the cucumbers that I planted last month were going to work, but I currenly have enough cucumbers to fulfill our cucumber addiction...yeah! Fall gardening rocks (minus the mosquitos--they are truely awful). Next year, I am planning to do a spring, early summer and fall/winter garden....NO gardening at all in July and early August.
